Potato, Kale, Garlic and Cheese Pizza + A Birthday

Tonight is a special Friday Night Pizza Night because not only are we baking a new pizza, we are also celebrating a special birthday thats tomorrow! Cheers to our sister-in-law Becky!!!! We know your favorite pizza is Barbeque Chicken Pizza, but we are confident you will like this Potato, Kale, Garlic and Cheese pizza.  Happy Friday Night Pizza Night and HAPPY EARLY BIRTHDAY!!!


Potato, Kale, Garlic and Cheese Pizza

Ingredients

– 1 pizza dough
– 1 russet potato
– 2 cups kale, chopped and ribs removed
– 1 cup mozzarella cheese, shredded
– 1 ½ cups fontina cheese, shredded
– ½ red onion, sliced thin
– 2 cloves garlic, diced
– 1 Tablespoon Olive Oil
– 1 Tablespoon dried basil leaves
– Salt
– Pepper
– Lawry’s Season Salt

Instructions
1. Preheat oven to 450 degrees.
2. Roll the dough out onto a lightly floured and cornmeal surface.
3. Meanwhile, slice washed potato very thin. Put on a cookie sheet lined with parchment paper. Sprinkle Lawry’s seasoning on the potatoes. Cook for about 15-20 minutes.
4. Spread 1 Tablespoon of olive oil on the surface on the dough, topping with garlic and dried basil leaves.
5. Spread mozzarella and fontina cheeses evenly over dough. Add chopped kale and red onion. Top with potato slices.
6. Put the pizza in the oven and bake for 15 minutes or until cheeses are melted and crust is crisp and lightly browned.

Shaved Brussel Sprout Mushroom Pizza with Cauliflower Crust

It’s that time again – Friday Night Pizza Night with T.W.O. Tonight, we are featuring a shaved brussel sprout, mushroom pizza with a cauliflower crust. It’s not your traditional pizza, but that’s what makes it fun and original- right? Can’t keep eating the same thing every week. If you are looking to experiment with you pizza, this recipe is for you! Did we mention it is healthy and gluten-free? Oh…and it tastes good too! Happy Friday Night Pizza!

For the Crust
– 1 large head of cauliflower or two small heads, coarsely chopped (creates about 4 cups of cauliflower “rice”)
– 3 eggs
– 1- 1 ½ cups almond meal
– ¼ cup mozzarella cheese
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
Sea salt and cracked black pepper

 For the Toppings
– 1 cup ricotta cheese
– 2 cups mozzarella
– 1 large yellow onion, peeled and chopped
– 2 cups Brussels sprouts, shredded
– 1 Tablespoon balsamic vinegar
– 1 small package mushrooms
Sea salt and cracked black pepper

Place chopped cauliflower in food processor, sprinkle with salt and pepper and pulse until it resembles a rice consistency. Transfer cauliflower rice to a large bowl and add almond meal, eggs, mozzarella garlic powder and onion powder. Using your hands, mix all ingredients together until it begins to stick and can be shaped into two balls.

If the cauliflower balls are too wet, squeeze the excess liquid out and add a little bit more almond meal. The texture will never be dry like conventional flour dough but you don’t want it to be dripping wet either. A little moisture is fine and will not prevent the crust from firming up in the oven.

Line a two baking sheet with parchment paper. Transfer the cauliflower balls onto the center of the paper and using your hands, shape into a pizza crust of about 1/3 inch thickness. Bake the cauliflower pizza crust in the oven for 20-25 minutes, until the sides are beginning to brown. Remove from oven.

Once the pizzas are done, spread one pizza with ricotta and the other with mozzarella. Spread the Brussels sprouts, onions and mushrooms evenly over the top of the pizza. Drizzle with balsamic.

Place in the oven for 15 more minutes. Remove and let cool for 2 minutes before serving. Another successful Friday Night Pizza Night!!

ZeroZero is obviously named after the flour that is used to make the pizza dough. That being said, by using 00 Flour and a stone oven, it’s safe to safe the pizza has a light, airy and fluffy crust. Not to mention the dough is sweet. Combining the dough with fungi or vegetables and even their seasonal special that incorporates fresh produce to make a delectable masterpiece.  ZeroZero does it write! Start the meal with a beet salad and a side of fresh pasta. The lamb rague is awesome. Can’t forget about the wine on tap too! The rose is great!! The final course – an afrigato. Minimalist. Tradition. Perfection. It’s a one guy show at this restaurant. Immediately you walk into this place thinking that you are going to be impressed. It’s a white wall, concrete floor filled space that is commonly covered in flour. Yes, one guy. His kitchen is set up in the middle of the restaurant or should I call it an art exhibit. That’s the feel you get. Now for the pizzas-there isn’t many, but that’s okay because you don’t need much. Margarita, Bianca, traditional-take your pick. Each person orders a pizza for them self. And you will be disappointed when you fits his it yourself. Don’t expect salads or anything else on the menu. It’s all about the pizza. Pair it with wine or a beer and finish the meal off with coffee. That it. You will be coming back for more! There are no reservations for this place, so be sure to get there early. Once the pizza dough runs out, that’s it. Closed for business’s. Enjoy!

Broccolini White Pizza

TGIF! It’s time for Friday Night Pizza Night!!! Today we are using a new ingredient on our pizza….broccolini.  This vegetable looks like mini-broccoli and is often misidentified as young broccoli,  but it is a hybrid of broccoli and kai-lan,

Ingredients:

– Pizza dough
– Cornmeal
– 2 Table spoons olive oil
– 2 Tablespoons dried basil
– 2 garlic cloves, chopped
– 4 stems broccolini
– ½ cup olives, diced
– 1 – 1 ½ cup marinated artichoke hearts, sliced
– 3 cups mozzarella

Preheat oven to 425ᴼF.
Roll out the pizza dough on a floured/ cornmeal surface. Once the dough is evenly rolled out, transfer the dough to a greased cookie sheet.

Next take the olive oil and spread it on the dough, making sure you reach all the edges. Sprinkle the diced garlic and basil evenly on top of the olive oil.

Add your mozzarella cheese, followed by the broccolini, artichokes and olives.  Spread the toppings evenly.

Let the pizza rise for about 15 minutes. Note – you don’t want to put the pizza in a cold oven, so make sure your oven reaches 425ᴼF. Once the oven is ready, place the pizza in the oven and watch closely.  The pizza will take 15-20 minutes.

Once done the pizza is done, take it out of the oven and let it sit for 5 minutes.

Cut and serve.  Once again, another successful Friday Night Pizza Night!!!

Twice Baked Potatoes

It’s almost Super Bowl Sunday…do you have a menu ready? If not, don’t worry! Between now and February 2nd, we will be featuring some delicious recipes that will be perfect options for your spread! Today–twice baked potatoes!

Ingredients
-6 large Russell Potatoes, washed
-1/2 cup 2% milk
-1/2 cup sour cream
-2 garlic cloves, diced
-1/2 cup butter, softened
-2 cups cheddar cheese, shredded
-4 Tablespoons dried basil leaves
-Green Onions
Krazy Salt
-Pepper

Preheat oven to 400°F.

Using a knife, poke holes in the potatoes prior to putting in the oven. This allows the potatoes to breath and the heat to spread evenly inside. And so they don’t burst!

Bake the potato for about 30-40 minutes. You will know when the potatoes are done when you can easily put a butter knife through each of them.

Remove the potatoes from the oven and let them sit for 5 minutes. Using a sharp knife. Slice the potatoes in half, long ways.

Using a spoon, scoop the inside of the potatoes out and place into a big mixing bowl. Scrap as much out as possible without breaking the skin. Once complete, add the butter to this warm mixture to melt. While melting, add sour cream, garlic, milk, 1 1/2 cup cheese, basil leaves, salt and pepper. Mix with a hand mixer or a wooden spoon. Once all the ingredients are combined, add the potato mixture to the potato skins.

Top the stuff onions with the remaining shredded cheese. Place in the heated oven for 10-15 minutes. Then turn the oven to broil and let the potatoes broil for 1-2 minutes. The cheese should melt and the tops should get a little brown. Remove the potatoes from the oven. Top with green onions/ chives and serve!

Your football crowd will be pleased!

Berry Lemon Cheesecake

Berry Lemon Cheesecake – It’s fluffy, light, refreshing, and savory! Most cheesecakes are dense and filling, which bad, but it’s nice to not feel stuffed after dessert. T.W.O. loved the combination of the lemon, berries, cream cheese and eggs that created a light, mousse-like treat and are excited to share this masterpiece with our readers. We guarantee that this will be a hit at your next dinner party, family barbeque or date night. Cheers Lemon Week!

Ingredients:
 3 cups graham cracker crumbs
 1/3 cup butter, melted
 ½ cup granulated sugar
 2- 8 ounces packages of cream cheese, softened
 2- 8 ounce packages of Neufchâtel, softened
 1 cup granulated sugar
 4 large eggs
 1/3 cup fresh lemon juice
 zest from 1 lemon
 ¼ cup corn starch
 2 cups fresh blackberries
 Fresh whipped cream for topping
Preheat oven to 300ᴼF.
In a bowl, combine graham cracker crumbs, melted butter and sugar. Mix until the crumbs are sticking together. Press crumb mixture in a 9” spring form pan. Make sure that the crumbs are evenly distributed on the bottom and sides. Set aside.image

Using a KitchenAid mixer, cream together the cream cheese and sugar until fluffy. Add the eggs, one at a time, mixing for about 1 minute each. Before adding an egg, make sure you scrape the sides of the bowl. Add lemon juice and zest and mix for about 3 minutes. Next, mix in cornstarch and beat for an additional 3 minutes until fluffy.

Using a flexible spatula, carefully mix in the berries. You don’t want the berries to break.
Pour the cheesecake mixture in over the graham cracker crust.image

Bake for 1 hour or until a toothpick comes out clean. Set on a wire rack to cool for about 40 minutes.

Cover the cheesecake and place in the refrigerator overnight.
When you are ready to serve, add a layer of fresh whipped cream to the top of the cake along with some mixed berries and a lemon garnish!

French Onion Soup

French Onion Soup

There are only a couple places that we like to go for French Onion Soup, but we can assure you that nothing beats T.W.O.’s French Onion Soup! It’s savory, light and healthier than most recipes! Every minute cooking it will be worth it in the end!

Ingredients:
– Beef broth*
– 5 sweet onions, sliced
– 1 bottle dark beer
– ¼ cup balsamic vinegar
– 3 cloves garlic, minced
– Salt
– Pepper
– Olive oil
– Baguette, sliced
– Mozzarella, sliced

*The secret to this recipe is the broth.  T.W.O. used the broth from their seven-bone roast they cooked a couple nights before.  The meat was seasoned with Montreal Steak seasoning and onion soup mix.  Make sure to strain the broth before using it for your French Onion Soup!

Sautee the onions and garlic in olive oil for 8-10 minutes or until soft.  Add salt and pepper to taste.

In a pot, bring the beef broth to a boil.  Add the garlic and onions.  Slowly stir in the beer, balsamic vinegar and fresh pepper.  Cook on high heat for 1 minute.

Bring the temperature down to low and cover the soup.  Cook for about 40 minutes to 1 hour.

Once the soup is ready, ladle some into an oven safe bowl.  Turn the oven on broil or 500°F.  Put the bread in the oven and broil until a little toasted.  Once toasted, put the bread in the soup and top with a slice of mozzarella.

Place the soup in the oven and broil for about 3 minutes or until the cheese browns a bit.  Remove from the oven and place on a plate so you don’t burn your hands!

Ready to serve! Happy cooking.

Fig & Brie Pizza with Caramelized Onions and Spinach

It’s Friday Night Pizza Night with T.W.O.!! This time, it wasn’t just us cooking in the kitchen – it was some of the most important women in our lives that helped us prepare this meal. Thank you to our Mom, Aunt and Sister In-Law who made this one of the best pizza making nights for the books!!! Soo – what was on the menu? Well, we had six different pizzas all made with what we had in the refrigerator. Yep, that’s right – there was no last minute rush to the market to get the ingredients. Today we are featuring the Fig & Brie Pizza with Caramelized Onions and Spinach. Check out how to make this mouth-watering, savory pizza.

Now Show Me How Much Fun You Are Having!

Ingredients

– Pizza Dough*
– Cornmeal
– Flour
– ¾ cup fig jam**
–  ¾ cup caramelized onions
– 6 slices brie cheese
– 2 cups spinach salad tossed in THIS dressing

*T.W.O. used pizza dough from Lucci’s Deli.
** The fig jam was homemade and jarred by our Aunt.

Preheat oven to 425ᴼF. Roll out the pizza dough on a floured/ cornmeal surface. Once the dough is evenly rolled out, transfer the dough to a greased cookie sheet. Next take the fig jam and spread it on the dough, making sure you reach all the edges. Sprinkle caramelized onions evenly on top of the fig jam.

Next add the slices of brie cheese to the top of the pizza. If you want your pizza to have more cheese, T.W.O. isn’t stopping you –go ahead!

Let the pizza rise for about 15 minutes. Note – you don’t want to put the pizza in a cold oven, so make sure your oven reaches 425ᴼF.Once the oven is ready, place the pizza in the oven and watch closely. Do not open the oven door, as you want to keep the heat in. The pizza will take 15-20 minutes. Once done, take the pizza out of the oven and let it sit for 5 minutes prior to cutting.

Potatoes au Gratin

Potatoes make a great side dish, but sometimes, well- they can just be so bland. T.W.O. decided to change things up a bit and make Potatoes Au Gratin! And wow, was it a hit! The ingredients are simple, but the flavor is so delectable!

Ingredients:

-½ cup low-salt chicken broth
-1½ cups heavy cream
-2-3 garlic cloves, chopped
-1 Tablespoon dried basil
-2½ pounds Yukon Gold potatoes, peeled and sliced about 1/8 inch thick
-Krazy Salt and freshly ground black pepper
-1 Tablespoon nutmeg
-1-2 cups grated Gruyère cheese

In a small saucepan, combine the broth, cream, garlic and basil. Bring to a boil. Take it from the heat and let the flavors infuse as you assemble the potatoes.

Heat the oven to 350°F. Spread about one-third of the potatoes in the bottom of a 2-qt. gratin or heavy baking dish. Season with salt, pepper and nutmeg. Layer with 1/3 of cheese. Top with another one-third of the potatoes, season with salt, pepper and nutmeg again. Layer with another 1/3 of cheese. Arrange the remaining potatoes on top and season.

Put the gratin dish on a baking sheet to catch any spills. Pour the cream mixture over the potatoes. Sprinkle with the remaining cheese.

Cover the dish loosely with foil and bake in the oven until the potatoes start to get tender, about 30 minutes. Remove the foil and continue baking, basting occasionally with the liquid in the dish, until the potatoes are very tender when pierced with a knife and a golden crust forms on top. This will take about another 30 to 45 minutes. Let cool for about 15 minutes before serving.

Chili – Cornbread

Fall is in full swing at T.W.O.’s house and that means cornbread and chili are on the menu.  Learn how to make a chili-cornbread that is a great addition to your chili  supper.

Ingredients:

– 2 boxes Jiffy Cornbread Mix
– 2 eggs
– 2/3 cup milk (T.W.O. used almond milk)
– 1 cup cheddar cheese, shredded
– 1 can cream of corn, 14.75 oz can
– 1 can diced Ortega chili, 7 oz can

Preheat oven to 400°.  In a bowl, mix cornbread mix, egg and milk until creamy.  Slowly add in ¾ cup cheese, cream of corn and Ortega chili.  Once mixed, pour batter into a greased 8.5 x 11 pyrex dish.  Sprinkle ¼ cup of cheese on  top of the cornbread before putting in the oven.

Cook for 20-25 minutes.  Once done, take the cornbread out and serve immediately.  Add some honey if desired and your chili night will be complete!  Later this week, T.W.O. will be featuring their chili recipe, so stay tuned!
