French Onion Soup

French Onion Soup

There are only a couple places that we like to go for French Onion Soup, but we can assure you that nothing beats T.W.O.’s French Onion Soup! It’s savory, light and healthier than most recipes! Every minute cooking it will be worth it in the end!

Ingredients:
– Beef broth*
– 5 sweet onions, sliced
– 1 bottle dark beer
– ¼ cup balsamic vinegar
– 3 cloves garlic, minced
– Salt
– Pepper
– Olive oil
– Baguette, sliced
– Mozzarella, sliced

*The secret to this recipe is the broth.  T.W.O. used the broth from their seven-bone roast they cooked a couple nights before.  The meat was seasoned with Montreal Steak seasoning and onion soup mix.  Make sure to strain the broth before using it for your French Onion Soup!

Sautee the onions and garlic in olive oil for 8-10 minutes or until soft.  Add salt and pepper to taste.

In a pot, bring the beef broth to a boil.  Add the garlic and onions.  Slowly stir in the beer, balsamic vinegar and fresh pepper.  Cook on high heat for 1 minute.

Bring the temperature down to low and cover the soup.  Cook for about 40 minutes to 1 hour.

Once the soup is ready, ladle some into an oven safe bowl.  Turn the oven on broil or 500°F.  Put the bread in the oven and broil until a little toasted.  Once toasted, put the bread in the soup and top with a slice of mozzarella.

Place the soup in the oven and broil for about 3 minutes or until the cheese browns a bit.  Remove from the oven and place on a plate so you don’t burn your hands!

Artichoke & Spinach Pizza

Do you know what night it is?? Yep, that’s right…Friday Night Pizza Night! We are featuring an Artichoke & Spinach Pizza this week. It’s a hearty pizza with a béchamel-style sauce and fresh spinach that will please any crowd. Check out how to make this delicious, gourmet pizza below!

Ingredients

– Pizza Dough*
– Cornmeal
– Flour
– 8 oz fresh spinach, divided
– 2 Tablespoon butter
– 2 Tablespoon unbleached flour
– ¾ cup milk
– ¼ teaspoon onion powder
– 2 cloves garlic, diced
– 1 Tablespoon Extra Virgin olive oil
– 6 ounces mozzarella cheese, shredded
– 2 ounces Pecorino Romano, grated
– 1-8 ounce can of marinated artichoke hearts
– Krazy Salt
– Fresh Ground Pepper

 *T.W.O. used pizza dough from VJB Deli.

Preheat oven to 425ᴼF.

Roll out the pizza dough on a floured/ cornmeal surface. Once the dough is evenly rolled out, transfer the dough to a greased cookie sheet.

In a large sauté pan, heat 1 Tablespoon of olive oil over medium heat for about 1 minute. Add ¾ of the spinach and sauté for 3 minutes or until wilted. Remove from heat and place on paper towels. Once some of the oil is drained, chop the spinach and set aside.

In a small saucepan, melt butter over medium heat. Whisk in flour and onion powder and cook for 2 minutes. Slowly add the milk and increase the temperature to medium-high heat for about 4 minutes or until the sauce thickens. Make sure you are stirring constantly, so the sauce doesn’t burn. Remove from heat and stir in 1 clove of diced garlic, pepper, Krazy Salt and sautéed spinach.

Chop the remaining fresh spinach and set aside.

Add the white béchamel spinach sauce to the top of the pizza dough. Add the fresh spinach along with the remaining 1 clove of chopped garlic. Sprinkle the shredded mozzarella and Pecorino Romano cheese on top.

Let the pizza rise for about 15 minutes. Note – you don’t want to put the pizza in a cold oven, so make sure your oven reaches 425ᴼF.Once the oven is ready, place the pizza in the oven and watch closely. Do not open the oven door, as you want to keep the heat in. The pizza will take 15-20 minutes. Once done, take the pizza out of the oven and let it sit for 5 minutes prior to cutting.

Chocolate Cheesecake Bars

This Chocolate Cheesecake bar recipe has been in our family for years and has been made for birthday parties, wedding showers, dinner parties and holidays. The chocolaty, thick crust combined with the fluffy, dense cheesecake layer makes for a great easy dessert. Check out how to make these bars for your next event….or cozy night in!

Ingredients:

– 1-12oz package chocolate chips
– ¼ cup butter
– 2 cups Oreo crumbs
– 1-8oz cream cheese, softened*
– 1-8oz Neufchâtel, softened
– 1-14oz sweetened condensed milk
– 2 teaspoon vanilla extract
– 1 egg

Preheat oven to 350ᴼF.

Heat chocolate chips and butter in a microwave-safe bowl. Once the morsels are melted, add the Oreo crumbs to the chocolate. Place ¾ the mixture in the bottom of a 9×13 pan. Make sure it is spread evenly. Set aside.

Using a KitchenAid (or handmixer), beat the cheese until fluffy. Add in milk, eggs and vanilla. Mix for about 5 minutes.

Pour the mixture into the pan. Top with the left over crumb mixture.

Bake for 25 minutes or until a butter knife comes out clean.

Remove the bars from the oven and set to cool for about 20 minutes. Refrigerate overnight for best results!!

Fig & Brie Pizza with Caramelized Onions and Spinach

It’s Friday Night Pizza Night with T.W.O.!! This time, it wasn’t just us cooking in the kitchen – it was some of the most important women in our lives that helped us prepare this meal. Thank you to our Mom, Aunt and Sister In-Law who made this one of the best pizza making nights for the books!!! Soo – what was on the menu? Well, we had six different pizzas all made with what we had in the refrigerator. Yep, that’s right – there was no last minute rush to the market to get the ingredients. Today we are featuring the Fig & Brie Pizza with Caramelized Onions and Spinach. Check out how to make this mouth-watering, savory pizza.

Now Show Me How Much Fun You Are Having!

Ingredients

– Pizza Dough*
– Cornmeal
– Flour
– ¾ cup fig jam**
–  ¾ cup caramelized onions
– 6 slices brie cheese
– 2 cups spinach salad tossed in THIS dressing

*T.W.O. used pizza dough from Lucci’s Deli.
** The fig jam was homemade and jarred by our Aunt.

Preheat oven to 425ᴼF. Roll out the pizza dough on a floured/ cornmeal surface. Once the dough is evenly rolled out, transfer the dough to a greased cookie sheet. Next take the fig jam and spread it on the dough, making sure you reach all the edges. Sprinkle caramelized onions evenly on top of the fig jam.

Next add the slices of brie cheese to the top of the pizza. If you want your pizza to have more cheese, T.W.O. isn’t stopping you –go ahead!

Let the pizza rise for about 15 minutes. Note – you don’t want to put the pizza in a cold oven, so make sure your oven reaches 425ᴼF.Once the oven is ready, place the pizza in the oven and watch closely. Do not open the oven door, as you want to keep the heat in. The pizza will take 15-20 minutes. Once done, take the pizza out of the oven and let it sit for 5 minutes prior to cutting.

Cheese-Filled Pastry

Waking up in the morning and enjoying a cup of coffee along with a fresh piece of pastry is typical of the European lifestyle. T.W.O. would love to take on that same tradition and bring it to the States. Every day is a vacation, right? Well not exactly, but T.W.O. can help out in the pastry department. Learn how to make this scrumptious cheese pastry that will “WOW” a crowd!

Ingredients

For the Dough:
-2 ¼ teaspoons instant yeast
– ¼ cup water, lukewarm
– ½ cup 2% milk, lukewarm
-¼ cup unsalted butter, melted
– ¾ cup granulated sugar
-1 Tablespoon vanilla
– 1 egg
– 3 cups unbleached all-purpose flour

 For the Filling:
-8 ounces cream cheese or Neufchâtel, room temperature
-½ cup granulated sugar
-1 egg
-1 Tablespoon vanilla extract
– 2 teaspoons lemon zest or orange zest
-3 Tablespoons flour
– 1 cup of your favorite fruit jam or chocolate chips*

*T.W.O. doubled the recipe and made 3 large braids. They used apricot jam, boysenberry preserves and chocolate chips.

In a small bowl, mix the lukewarm water and the yeast together. Set aside. Mix all the dough ingredients together in a large bowl. (It’s best to use a mixer or a pastry blender) Mix in the water/yeast mixture. The dough should form a soft, smooth ball. Set aside and cover for about 2 hours or until the dough has doubled in size.

While the dough is rising, start making the filling. Using a KitchenAid or handmixer, mix the cream cheese until fluffy. Add the egg, sugar and vanilla. Mix well. Finally, add the lemon/orange zest and flour. Place the filling in the refrigerator to chill.

After the dough has doubled in size, place the dough on a floured surface and divide in half. Roll each dough out into a long rectangle making sure it is rolled out evenly.

Spread the cream cheese filling in the middle of the dough. Top with your favorite jam or chocolate chips. Cut 1 inch wide strips around the edge of the dough. Fold the strips towards the middle to create a lattice top.

Once completed, cover the pastries and set aside to rise for about 1 hour.

Preheat oven to 350ᴼF.

Right before the pastry is ready to go in the oven, brush the dough with egg whites. Sprinkle with sugar. The pastries will bake for about 30 minutes, but watch them closely so your dough doesn’t get brown.

Ready yet? I think so! Now it’s time to pour yourself some coffee and enjoy your pastry! T.W.O. suggests eating the pastry warm. If you want to reheat the pastry, cover it with foil and place it in a 200ᴼF oven for about 15 minutes.

French Silk Pie

Are you a chocolate lover? Are you a pie lover? Well, you are in luck! T.W.O. has the perfect recipe for your –French Silk Pie. It’s a rich, fluffy, dense mousse pie that will be great for your next dinner party!

Ingredients:

-4 oz. bittersweet or semisweet chocolate
-1 teaspoon butter or shortening
-1 cup unsalted butter, softened
-1 ½ cups granulated sugar
-2 tablespoons vanilla extract
-4 eggs, room temperature
-1 fully pre-baked 9 inch pie shell (See recipe HERE)
-3 cups whipped cream

 Preheat oven to 350°F.

In a microwave safe bowl, head the chocolate and butter/shortening in 20-second intervals, stirring between each interval until completely melted. Cool for 10 minutes.

With a KitchenAid or handmixer, cream together butter, sugar until fluffy. Add the melted chocolate gradually until mixed well. Add vanilla.

Using a whisk or the whisk attachment, add one egg at a time. Each egg should be beat for 5 minutes, totaling 20 minutes. The filling should be thick and fluffy. Once you get the consistency, add the filling to a pre-baked pie shell.

Place the pie in the oven and bake for 30 minutes or until a butter knife comes out clean. Let the pie cool for about 30 minutes. Once cooled, place the pie in the refrigerator for a minimum of 4 hours. It’s best to make this pie the night before.

Just when you are ready to serve, put the whipped cream on top of the pie. Garnish the top of the pie with shaved chocolate.

By this time, I am sure you are ready to taste this delectable, chocolaty pie!

Gruyere Popovers

In T.W.O.’s family, we are always sharing new recipes and ideas, so we decided to post about the most recent inspiration from our sister-in-law (aka- our sister!). She invited us over for dinner and made Popovers that were delicious.  We loved the idea,  so put a spin on her popovers and added Gruyere cheese.  Check out how to make these fluffy, flakey, delectable treats!

Ingredients:

– 3 cups milk, warmed
– 3 cups unbleached flour
– 6 eggs
– 2 cups Gruyere cheese, shredded

*Butter is optional for greasing the pan. T.W.O. used PAM instead.

Preheat oven to 400°F.  While the oven is preheating, place the muffin tins in the oven to warm.

In a bowl, beat the eggs until fluffy.  In a microwave safe bowl, heat the milk until the edges start to bubble.  If you have a thermometer, the milk should be about 125°F.  Slowly add the milk into the egg mixture making sure not to cook the eggs. Whisk together.  After the ingredients are mixed well, add the flour.

Remove the muffin pans from the oven and spray with baking oil.  Make sure you get the edges.  With a big spoon, pour the batter into each muffin tin, filling it about ¾ full.  Once you fill all the cups, place the muffin tin in the oven for 20 minutes.

After 20 minutes, reduce heat to 350°F and bake for another 10 minutes. Note – DO NOT open the oven.  This will let the heat out and your popovers won’t pop as well!  Use your oven light to check on the status of the delicious, airy treats! Also – placing the popovers on the middle rack helps circulate the air.

Here are a couple alternative ways to spice up your Popovers without the Gruyere cheese!

Cheddar Cheese Popovers:
– 2 cups cheddar cheese, shredded

Cinnamon & Sugar Popovers:
– 1 cup granulated sugar
– 2 Tablespoons vanilla
-1 Tablespoon cinnamon

Pumpkin Cheesecake

Need a recipe for the holidays that will really impress your guests? Well, T.W.O. has the perfect solution for you – Pumpkin Cheesecake. It’s a moist, creamy and delectable cake that will compliment any meal. There is even better news too – you can make it the night before so you don’t have to worry about baking the day of your dinner party!

Ingredients

Crust:
– 1 ¾ cups graham cracker crumbs
– 3 tablespoons light brown sugar
– ½ teaspoon ground cinnamon
– ½ teaspoon ground nutmeg
– 1 stick butter, melted

 Cheesecake filling:
– 2 (8-ounce) packages cream cheese, room temperature
– 1 (8-ounce) packages Neufchâtel, room temperature
– 1 (15-ounce) can pureed pumpkin
– 3 eggs plus 1 egg yolk
– ¼ cup sour cream
– 1 ½ cups granulated sugar
– 1 teaspoon ground cinnamon
– 1 teaspoon ground nutmeg
– ½ teaspoon ground cloves
– 2 Tablespoon all-purpose flour
– 1 teaspoon vanilla extract

Preheat oven to 350ᴼF.

In a bowl, mix the graham cracker crumbs, sugar, cinnamon, nutmeg and butter. Create crust by pressing this mixture to the bottom and sides of a 9-inch springform pan. Put aside.

Using a mixer (T.W.O. uses a KitchenAid mixer), beat cream cheese until smooth. It is important to make sure your cream cheese is room temperature so the filling doesn’t contain chunks of cream cheese. Add in eggs, yolk, pumpkin, sour cream, sugar, vanilla, cinnamon, nutmeg and cloves. Mix well. Slowly combine flour into the filling mixture.

Pour the filling into the springform pan, and make sure it’s evenly distributed. Put a bowl of water on the bottom wrack of the oven. This helps prevent any cracks in your filling. Place the cheesecake in the oven for about 1 hour or until a butter knife comes out clean. Set aside and let cool for 30 minutes. Cover the cake and place in the refrigerator for a minimum of 4 hours. T.W.O.suggests leaving it overnight.

Once you are ready to eat, add some whipped cream to the top of the cake, garnish with a sprinkle of cinnamon and serve! Don’t be surprised if people ask for seconds or get caught eating it for breakfast! T.W.O. did!

Pumpkin Coffee Cake

Pumpkin Chocolate Chip Cookies, Pumpkin Pie, Pumpkin Pancakes, Pumpkin Greek Yogurt…why not add Pumpkin Coffee Cake to the mix? T.W.O. just did that. Check out this savory coffee cake recipe that tastes like the holiday season in every bite! It’s a moist cake that can be enjoyed for breakfast, a snack and even dessert!

Crumb Layer
– ½ cup sugar
– 2 teaspoon cinnamon
– ½ teaspoon nutmeg
– 1 stick unsalted butter, melted
– 1 ½ cups unbleached flour
– Confectioner’s sugar (optional, to sprinkle on top of the cake when done)

 Cake Layer
– 1 ½ cups unbleached flour
– 2 teaspoons baking powder
– ½ teaspoon baking soda
-1 teaspoon cinnamon
– 1 teaspoon nutmeg
– 1 teaspoon cloves
– 1 stick unsalted butter, room temperature
-1 cup sugar
– 2 eggs
-1 Tablespoon vanilla
-½ cup sour cream
– ¾ cups Libby’s canned pumpkin

Preheat oven to 350ᴼF.

To Make the Crumb Topping:

Combine sugar, cinnamon and nutmeg in a bowl. Slowly add the melted butter and flour into the mixture. Mix well and set aside.

To Make the Cake:

Cream the butter, sugar in a bowl. (T.W.O. uses a KitchenAid mixer!) Add the eggs, pumpkin, vanilla and sour cream. Make sure all the ingredients are mixed well before adding in the flour, baking powder, baking soda, cinnamon, nutmeg and cloves. Once combined, get ready to assemble!

Pour the cake batter into a greased 9” round pan (or a spring-form pan, which makes for a better presentation of the cake!). Make sure the batter is evenly distributed. Add the crumble to the top of the batter and bake for 45 minutes or until a butter knife comes out clean. Allow the cake to cool for 15 minutes before taking it out of the pan.
