Kitchen Sink Summer Salad

Schools back in session and the weather is still hot, so no need to spend hours in the kitchen whipping up meals – try this simple, quick and flavorful salad. It’s a great idea for weeknight side dishes or your Saturday barbecue. T.W.O. calls it the ‘kitchen sink’ because it contains such a variety of vegetables and ingredients that you have in your pantry or refrigerator. Enjoy!


Kitchen Sink Summer Salad

Ingredients:
-3 small avocado (or 2 large avocados)
-1 jar whole hearts of palm,
-1 – 15 ounce can garbanzo beans
-2 cups mini heirloom tomatoes
-1 lemon, juiced
-1 Tablespoon olive oil
-4 Tablespoons balsamic vinaigrette
-2 Tablespoons rice vinegar
-3 teaspoons garlic powder
-Salt
-Pepper

Directions:
1.Wash and drain the garbanzo beans using a strainer.
2.Halve the mini heirloom tomatoes and place in a large bowl.
3.Slice and add hearts of palm to the bowl along with the garbanzo beans.
4.Cut the avocado into small cubes. Place the in the bowl.
5.Mix in olive oil, balsamic, lemon juice, rice vinegar and garlic powder.
6.Add salt and pepper to taste.
